I bought the 12.5 paella pan and using it as a “wok”. Here is how i seasoned my pan. Clean pan with dishwashing soap and warm/hot water. Scrubbed the pan with a scouring pad to remove the bees wax. Fill with water and half a cup of salt and bring to a boil. Removed water and scrub again with soap and scouring pad. Dry pan. Place on stove on high heat for 20-30 (depending on your stove) minutes until all parts of the pan turn blue color. This is called blueing steel. Let pan cool. Rub pan lightly with canola oil using paper towel. Key word here is lightly. You want a very thin layer of oil. If oil start to bead wipe with paper towel. Stop until smoke appear. Repeat wiping pan with oil 3-5 times. Now slice up some ginger and onions and cook them with 1/4 cup of oil to add “flavor” to the pan. Cook until ginger and onions turn black. Did the egg test after the 3rd time using the pan to stir fry and the egg did not stick. Very happy with the pan. This pan replaced my teflon coated wok and my teflon frying pans. To maintain the pan, clean with warm water and scrub with a soft brush. Lightly coat pan with oil before putting away….Side note: the bottom of the pan is in a beautiful blue color after blueing the steel. I like this color so before i use the pan i wash the bottom of the pan with soap and water to remove the thin oil coating. This will keep the bottom of the pan turning brown/black. ��
